La terra dell'agriturismo è coperta da uliveti, frassineti, agrumi, alberi da frutto di varietà antiche e da ortaggi in pieno campo.&lt;/span&gt;&lt;/blockquote&gt;&lt;blockquote style="text-align: center;"&gt;&lt;span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;Poco sopra il Ristorante dell'Agriturismo c'è un piccolo laghetto, ricco di vita e pieno di  pesci persico e carpe. Furono probabilmente i medici arabi a chiamarla manna, considerate le sue virtù curative, “miracolose”, e soprattutto, per alcune somiglianze con la descrizione dell’episodio biblico.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Nel mondo moderno le sue molteplici proprietà curative sono state diffuse per opera dei maestri della Scuola&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Salernitana fin dal X secolo, ma va ricordato che era molto usata tra gli Arabi anche per le sue qualità spirituali,&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;in quanto considerata “Benedetta”, essendo menzionata nelle Sacre Scritture.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Nel passato si conoscevano, ed erano commercializzate, diverse secrezioni vegetali zuccherine, dette “&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;miele&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;”,&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;che si trovano depositate sulle fronde di diverse piante e sul suolo sottostante, come gocce “&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;di rugiada&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;”, ma, nella maggior parte dei casi ne sono rimaste solamente notizie letterarie, essendosi perse le memorie anche tra i popoli che la raccoglievano.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Anche per la manna di frassino la storia non è diversa: sappiamo che, oltre che in Sicilia, era estratta in Toscana, Lazio, Campania, Gargano (Puglia) e dal 1500, per distinguerla da altri tipi di manna, era commercializzata col nome di Manna di Calabria, che all’epoca era il luogo di maggiore produzione.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Fin dall’inizio del ‘900, a causa della produzione industriale di mannitolo di sintesi, estratto dal melasso di barbabietola, la richiesta del mercato è man mano diminuita, fino quasi ad azzerarsi, portando al rischio d’estinzione anche quest’antica Cultura. Già nel 1957, anno d’istituzione del Consorzio regionale, già dichiarato nel 2003 Ente inutile ed in via di chiusura, era raccolta in tutto il mondo soltanto in una ventina di paesi della costa settentrionale della Sicilia. &lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;Oggi Custodi&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt; di tale conoscenza siamo rimasti meno di cento produttori, la maggior parte ultra settantenni, tutti operanti esclusivamente nelle campagne di Pollina e Castelbuono, comuni del Parco delle Madonie, a pochi chilometri da Cefalu’ in provincia di Palermo.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Per questo motivo nel 2002 Slow Food ha inserito la manna tra i prodotti da salvare nell’Arca del Gusto, e noi fin dall’inizio abbiamo aderito al progetto del Presidio “Manna Eletta delle Madonie”.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;COME E QUANDO SI PRODUCE&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Per fare uscire la dolce linfa, quasi trasparente, è necessario praticare, ogni giorno, profonde incisioni sul tronco o nei rami dell’albero: vere e proprie ferite chiamate ‘ntacche. Dipende dalla bravura e dall’esperienza del contadino “mannaro” fare in modo che l’incisione si rimargini nel più breve tempo possibile, e non provochi danni gravi. Il succo che sgorga subito dall’incisione, a contatto con l’aria calda e secca si solidifica sul tronco o, con le nuove tecniche, lungo un filo di nylon, sistema che permette una maggiore produzione di “cannoli”. &lt;/span&gt;&lt;/span&gt; &lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Il suo particolare gusto fra dolce e amaro, con retrogusto di mandorla o miele, e il suo colore, tra bianco e giallo o caramello, sono strettamente in relazione non solo alla varietà del frassino, ma anche all’ambiente circostante. &lt;/span&gt;&lt;/span&gt; &lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;Il periodo di produzione (incisione e raccolta) va dalla prima settimana di luglio alla prima-terza settimana di settembre&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt; (&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;e’ possibile vistare i frassineti,  prenotatevi&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;).&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;La durata e la quantità della produzione dipendono dall’andamento climatico della stagione.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;A secondo del modo in cui la linfa si solidifica, si ottengono le tre qualità principali: la manna eletta o cannolo, la manna drogheria e la manna lavorazione.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;LE PROPRIETÀ DELLA MANNA NATURALE&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;La composizione chimica della manna non è ancora del tutto nota; sono in corso nuove ricerche dell’Università di Palermo. La nostra manna, non essendo raffinata, può presentare caratteristiche diverse per ogni pezzo.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Riportiamo indicativamente alcuni valori dei componenti più significativi, tratti dalla pubblicazione aggiornata al 2005  a cura dell’Assessorato Agricoltura della Regione Siciliana.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&amp;gt; &lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;Mannitolo&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt; 45,15% &amp;gt; &lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;Mannotriosio&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt; 13.49% &amp;gt; &lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;Mannotetrosio&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt; 16.08% &amp;gt; &lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;Glucosio&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt; + &lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;Fruttosio&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt; 8.54%&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Pur non potendo disporre di dati definitivi, si sa che sono presenti, anche se in quantità minime, diversi principi&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;attivi: acidi organici, tannino, oligoelementi, vitamine, enzimi, frassina ed altri, che rendono la manna molto più&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;efficace e completa rispetto al semplice mannitolo di sintesi, estratto da fruttosio o melasso di barbabietola, normalmente in commercio presso farmacie ed erboristerie, purtroppo spesso spacciato per manna naturale, in violazione di una legge del 1928, e all’insaputa del consumatore.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;Dalla letteratura medico-scientifica&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt; sappiamo che la manna è innocua e priva di azioni secondarie (è sconsigliata solo nei casi di occlusione intestinale, appendiciti, peritoniti ed in soggetti particolarmente debilitati). Le sue virtù sono essenzialmente di blando lassativo non irritante o di ottimo purgante, utilizzabile anche in caso di emorroidi e DIVERTICOLITE. Facilita la produzione biliare e la “pulizia” del fegato.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;è consigliata nei casi di indigestione, perché non irritando evita l’insorgere della gastrite e gastroenterite. Espettorante, fluidificante, emolliente e sedativa della tosse e delle bronchiti; adatta nelle cure delle ulcere, delle vene varicose e in varie malattie ginecologiche. Era utilizzata anche nella preparazione di cosmetici. &lt;/span&gt;&lt;/span&gt; &lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;E’ dolcificante naturale ipocalorico, indicata anche per i soggetti diabetici: non modifica il livello glicemico.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;IN VENDITA&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;La manna dell’azienda agricola di Valerio Onorato, è prodotta da frassino coltivato esclusivamente con il metodo dell’Agricoltura Biologica, che oltre a certificarne la qualità, garantisce la tradizione e la storia di un prodotto dalle proprietà esclusive.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;La manna di Zabbra commercializza, anche per corrispondenza, due qualità di manna nelle seguenti confezioni:&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;CANNOLI DI MANNA o MANNA ELETTA DELLE MADONIE.&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt; In confezioni da 20g, 35g o 50g.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;I cannoli, sono la qualità di manna più pregiata e pura. Pronti da mangiare direttamente, hanno un gusto del tutto particolare, con sentori di noce, mandorla o miele, deliziosi, succhiati come caramelle, calmano la sete e aiutano a liberare &amp;nbsp;le vie respiratorie; dopo i pasti facilitano la&amp;nbsp;digestione e aiutano a regolarizzare le funzioni naturali dell’organismo.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;Ottimi come dessert, speciali se accompagnati da grappa invecchiata o marsala secco.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;La Manna è una sana alternativa allo zucchero di canna o di barbabietola.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0cm; text-align: justify;"&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;&lt;b&gt;MANNA DROGHERIA&lt;/b&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family: Arial, sans-serif;"&gt;&lt;span style="font-size: x-small;"&gt;. Tutte le stanze da letto e il soggiorno hanno una uscita diretta nel giardino tra i corbezzoli, i frassini,le palme, la salvia, le rose e i tanti fiori che circondano la casa.
